Description of feature

There's an nf-core module available for eggNOG-mapper: https://nf-co.re/modules/eggnogmapper
It could be worth integrating this into the pipeline as an alternative to InterProScan.

    I'm still not 💯 convinced about the benefits of InterProScan in temrs of keeping the piepline in scope, but as we have that I think it would be fine as an alternative.
