Use a unique scratch directory in test-pack.sh - #400

The macOS release validation fails with "Permission denied" because test-pack.sh deletes and reuses fixed /tmp paths. The self-hosted Macs run each runner as its own user and share /tmp, so those paths can belong to a user from an earlier job. Create a new directory with mktemp under RUNNER_TEMP, or TMPDIR outside CI, and delete it on exit. Signed-off-by: Ludvig Liljenberg <4257730+ludfjig@users.noreply.github.com>

Native macOS validation in the release workflow fails with "Permission denied": https://github.com/hyperlight-dev/hyperlight-js/actions/runs/41911818430/job/126897402226
test-pack.sh deletes and reuses fixed paths such as /tmp/hyperlight-npm-test-pack. The self-hosted Macs run each runner as its own user and share /tmp. An earlier validation by another runner user left those directories behind, and /tmp only lets their owner delete them.
This creates a new directory with mktemp under RUNNER_TEMP, or TMPDIR outside CI, and deletes it on exit.
Tested on Linux, where the script passes and removes its directory after both successful and failed runs.
